Easy Tofu Scramble

Don’t be fooled! These aren’t eggs, it’s tofu and it is Delicious! I don’t know about you but even before my vegan days, I hated eggs. They had to be covered in hot sauce, or cooked medium well for me to even consider eating them and even then it was a struggle. It’s interesting that we don’t always listen to the wisdom of our bodies. Eggs and meat products have always made me gag, especially when cooking them.

Problem solved with this tofu scramble! A few simple spices that you probably already have on hand, lend themselves to an eggy – egg free dish.

No Eggs Here!

Ingredients
1 Package Plain Firm Tofu
1 Package Smoked Firm Tofu
(If you can’t find smoked, just use another package of plain)
2 Tbsp non-dairy milk
1/2 tsp Turmeric
1/2 tsp garlic powder
1 tsp salt
Optional: for a smoky flavor add a tsp of smoked paprika or liquid smoke
1 small yellow onion, diced
1 clove garlic, minced
2 green onions, sliced

Instructions:

1. In a large pan saute onion and garlic, about 5 minutes.

2. Drain the tofu packaging but you do not need to drain the tofu further.
In a large bowl, crumble firm tofu into medium crumbles. Add remaining ingredients including cooked onion and garlic to bowl. Stir to combine, turmeric will give the tofu a nice yellow color.

3. Once well mixed over medium heat, add mixture to the same skillet you cooked the onion in. Cook about 10 minutes, stirring frequently. Taste and adjust seasoning to taste.

4. Serve immediately! Enjoy.
